By far, and like the title of the article says "...the only one I'll eat..." when it comes to an egg salad sandwich. The recipe calls for 1-2 tablespoons of mayo or Greek yogurt to be added. I've used one of each and just the Greek yogurt. I like it both ways. Maybe a little better with all Greek yogurt. At any rate I think what makes this recipe my definitive go to one, is the cooking technique/time of the hard cooked eggs. In fact, this is how I prepare them just for eating. I'm off breads for over 10 yrs and when I break down to eat a sandwich, it's a Reuben. And usually from a veggie restaurant and they don't use meats. But I enjoy all Reubens.
