Putting together a vegan breakfast for my girlfriend's and our families.

    My girlfriend's and my familys are coming to visit us, and my girlfriend wants to plan a vegan breakfast. My girlfriend is vegan, but I am not, I eat seafood and wild game, but not livestock. Because we live in Indiana, we can't get good, organic seafood year round, and I can only get wild game during hunting seasons. Because ofthis, I tend to eat a vegan diet for a good chunk of the year.

    Our families do not believe that vegan food is actually good, I we have decided to cook a large breakfast for them........

    My girlfriend also have a gluten allergy, so everything is also gluten free and organic....


    Here is what I have planned.....
    buckwheat pancakes, with fresh berries and maple syrup.
    scrambled tofu, with spinach, onions, garlic, mushrooms, and roma tomatoes.
    Fried Potatoes
    Sweetcorn & Oat porridge, fresh fruit.
    Toast made from rice bread, with earth balance, organic non-dairy margarine.

    To drink we have coffee, black tea, juices, and soy and almond milk.

    what are the full ingredients for the pancake batter?

    EDIT: askin because eggs & butter, although acceptable to vegetarians, is not for vegan

    There isn't any butter or eggs in them. My gf makes them, I'm not sure about all of the other ingredients. I know she uses some buckwheat flower, oil, baking powder, and she sweetens them with stevia, and a tiny bit of agave nectar.

    good, i was just makin sure you didn't <Rule 9> up your relationship with a vegan. i've a few vegan & veggie freinds/relatives and when they visit i always tell them to bring their own food/drinks, stay out of trouble that way ;)

    First off I'm not vegan or vegetarian and your breakfast sound good but... I would lose the tofu, I can't stand that stuff, there is not many foods I don't like and I don't know any non vegan/vegetarians who do. Sautee the spinach, onions, garlic, mushrooms, and roma tomatoes with the fried potatoes. Have some nuts available for the sweet corn & Oat porridge with fresh fruit.
    I'll would enjoy that breakfast.

    for tofu to be goo, you have to cook it right. It picks up the flavors of whatever it's cooked in. But you have to cook it for a long time for this to happen., until it starts to yellow and look more like eggs than tofu.
