Are you not aware who the Normans were?
The clue is in the name.
    Northern men or Norsemen.
They occupied parts of Ireland on the way to Northern France from Denmark and Norway.
By the time they invaded Angleland in 1066 they had been in Normandy for about 100 years.

The recipe actually originates in India, it was brought back to Britain by some Colonel returning after service in the Raj.
A Bloody Mary just isn't right without it.

    That's Worcestershire sauce.And it's a staple in my Kitchen.
A must for most Gravy's,Soups and whatnot.Has low sodium
and adds zest w/o being overpowering.I go thru a bottle in about
2 months.I detest these guys who demand hot sauce. They go out of their
way to buy, even collect Hot Sauces. One can virtually ruin a dish with
hot sauce.I consider it a Faux Manly attempt to be like a rugged Cowboy.
I also think wearing cowboy boots is the same manly attempt.
Most all Cowboy boots { if worn daily } will eventually lead to either
poor posture or ruined knees.Every time I'm in Wal*Mart I keep an eye out
for some older guy wearing Cowboy Boots,Blue jeans and a wrustler shirt.
They to a person have trouble walking.
They couldn't run to save their life.Unlike Serial Killer of the late
50's Charles Starkwater as displayed convinceably by Martin Sheen in
    - Badlands - { 1973 } who wore exclusively his snake skin Cowboy boots.
He took off faster than a fox in most scenes and also outsmarted
most everyone. However he possessed a hairtrigger temper and was
    most likely a committed Sociopath.
Just imagine how much more pain and death he could have mustered
if he wore today's high tech running shoes.
But Noooooooooo I highly recommend Worcestershire
It's a sauce that agrees with Cooking. Not tries to overwhelm.

Actually that's my kinda eats.Homemade stuff.Folks who eat
homemade stuff tend to live longer and happier.Using Whole foods
    as a base.Like the French and Italians.Or the Poles { Polish }
Some Germans.Microwave stuff will eventually hamper or cripple
one. It's preferable to store and keep dishes in Glass over plastic.
Plastic is the enemy of the body.

There's no right or wrong way to make these kinds of traditional dishes but we generally make it in a gravy.

Been to damn long since I shot a feral hog!

A relatively secluded spot I was checking out yesterday (that one with that huge, strange tree) a rabbit was sitting about 60 ft away, stock still. Would have been a broadside shot. I said to it...

"Rabbit, you are lucky about two things, I aint gunning for rabbit today and my .22 pellet gun is in my van up that dirt road, not in my hands".

It would have been a certain shot. Been a few years since I ate rabbit. As it is, I'll be eating shark for months now.

Having butchered many animals, I found myself wondering what butchering a human would be like. Then I thought, how repulsive...they only eat junk, any other mammal would be better. I'd sooner eat grass. And wash it down with rabbit poop tea.

But damn, is feral hog good. They eat off the land, no GMO feed, no hormones, antibiotics or steroids, not raised in a pen in their own filth. Death came swiftly, not in a fear filled slaughter house.

You cant tell me they cant sense death in the air and the fear don't taint the meat.

With a clean shot, they never see you and one second they were alive, in a handful of seconds, they are dead.

Yes, it's the adrenaline. Toughens the meat and lessens the flavour.

You can't buy it in the store (at least, that I have seen) if you could, I could not afford it...

Plus it's fun, get a tan, drink beer and wait for the bite!

Oh yeah there is Brazilian pepper I think the Australian pine trees somehow prevent other growth cuz it's always clear underneath of them maybe they give off some hormone that inhibits other plant growth?

I think the main reason is the diet. I once raised a few hogs and fed them acorns and chestnuts. The best bbq ever! I also gave them a lot of room.

My folks have always travelled. From France to Erie and from there to the northern U.S. and from there south. We have the Nordic features.... blue eyes, light skin, tall, etc.

I need to do a river walk with my .44 cap n ball again. That's how I bagged the last one. Better yet, if I can get permission from a private landowner but everyone is so fearful of lawsuits. Damn hogs are rampant around here.

That hunt was awesome, all the stars lined up to spot and stalk and take a sow with my revolver.

Did you have to cut it up to carry it?

I cut off the head and gutted it. Carried it about 500 yards to where my recumbent bicycle was parked (you may remember the pics of it?)

My bike was parked in a public park, I had hog's blood streaking down my chest and I realized I needed to wash it off before I entered the park and alarmed people, lol.

I put the carcass in a nylon sleeping bag sack and pedaled a couple miles home with it in my lap. I have gotten lazy, only rode my bike once since November when I got my van and license.

That day, I was headed out my Jehova Witness neighbor asked me where I was going, told her I was headed to the river to shoot a hog, she was like...unhh huhh...

Two hours later I knocked on her door and said look in the tree in my front yard, where the skinned carcass was hanging.

I was sore for days after that. I'd guess it weighed close to 150 on the hoof. OK, maybe closer to 130 but it was no lightweight.

    Ha ha ha.
Coming out of the woods covered in blood with a body in a bag and an ancient firearm in your belt. I'm sure nobody would have given you a second look. It is Florida after all...

I actually had the gun concealed at that point. I left the body by the fence where I crossed it and retreived my bike, to bring it closer. I had a local drunk who hangs at the river, help put it in my lap, once I mounted the bike. I stopped at a friends on the way home, his pit bull was scared of it, she had evidently, never seen one.

Many people might doubt this story, hell Foolardi seems to think you cant catch sharks on hook and line and remove the hook. But I assure you it's true. I wanted that hog, I prayed, I meditated, I visualized it.

In my mind's eye, I pictured what I would need to make it happen...a gun, a large and small knife, a "body" bag, some rope (though I never used it, I field dressed on the ground) Next time, I need rubber gloves, feral swine can transmit brucelosis AKA "packing house fever".

    What was the meat like?
I have served wild boar before (well wild boar crossed with Gloucester Old Spot) and the meat was really dark, almost the colour of beef or venison.
It went down really well with the customers and ran out before the end of service.

I liked it better than store bought. It was darker in color, somewhat lean. I cooked most on the grill with oak wood. My butchering probably left some to be desired. I gave away, what would not fit in the freezer.

I hear boar is much gamier than sow. Just so happens it was a sow, I'da shot a boar, just the same.

Talk about adrenaline, shooting from the ground with a revolver that can be less reliable than a modern one at large game that might charge at you, just as soon as it might run the other way. They can hurt you bad, in a hurry.

But all the ones I have seen, just run off. Now if piglets are close....who knows?
