LMAO....that's gross! Looks like a chicken threw up on that pizza. Where's OT with our breakfast? Nevermind, I remember mama's off today, still.

Morning, g/f.....I'm struggling with the things I've got to get done, too. Energy level has plummetted.

So, let's drink and eat special brownies!

Morning gang! what's on the agenda for today?

 

Drinking coffee & eating brownies, Mary. And contemplating how much we have to do.

Just had to write down something to bring for the potluck lunch next Tues and drew a blank. Ended up with tortilla pinwheels & stuffed jalapenos... the two most labor-intensive things I could think of.

ARGHHHHHHHHHH!

LOL....it's painful to come up with ideas for anything right now. I need an appetizer and 4 dozen cookies for a 'cookie exchange' girlfriend party Saturday. The cookies are no problem. I'm drawing a blank on an appetizer, which should be simple. And, I need something simple.

 

LOL, do what my g/f who was married to a football coach used to do... take a head of lettuce and a bottle of dressing. Tell 'em to roll their own salad.

(she hated the 'coaches wives' club)

Simple, but time consuming.



CATEGORY: Appetizer

METHOD:

TIME: Prep: 20 min. + chilling

Ingredients:
1 cup (8 ounces) sour cream
1 package (8 ounces) cream cheese, softened
1 can (4-1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped green chilies, well drained
1 cup (4 ounces) shredded cheddar cheese
1/2 cup chopped green onions
Garlic powder to taste
Seasoned salt to taste
5 flour tortillas (10 inches)
Fresh parsley for garnish
Salsa

Directions:
In a small mixing, combine the first eight ingredients until blended. Spread over the tortillas; roll up tightly. Wrap each with plastic wrap, twisting ends; refrigerate for several hours.

Unwrap; cut into 1/2-in. to 3/4-in. slices. (An electric knife works best.) Discard ends. Garnish with parsley. Serve with salsa if desired. Yield: about 4 dozen

(ugh, I'm tired already)

Alternate recipe (easier)

8 -10 flour tortillas
8 ounces cream cheese
2 tablespoons dry ranch dressing mix
10 -12 black olives
3 -5 green onions
8 -10 pieces deli turkey or 8 -10 pieces deli ham
8 -10 pieces swiss cheese or 8 -10 pieces cheddar cheese

Directions:
In a microwave safe bowl, soften the cream cheese in the microwave for about 10-20 sec.2Dice onions and olives fine and add to the cream cheese.3Now add the ranch dressing mix and stir this all together.4Spread about 1-2 Tbs. of mixture onto a flour tortilla and top with a piece of meat and a piece of cheese. You may use the meat or cheese of your choice. I usually make some with ham and cheddar and some with turkey and swiss.5Roll these up and wrap in a piece of saran wrap.6Place in refrigerator for about 2 hours or overnight and allow them to set.7Slice into 1 inch. pieces and enjoy.8Cooking time includes the time to set in refrigerator.

 

LOL....that's what I should do for the 'forced fun' event with the Army tomorrow. Doesn't it seem wrong to be forced to go to these things and spend time and money to do your 'part'? It does to me. Just call me anti-social.

Thanks! I'm copying and pasting this. I've had these particular appetizers at events and always intend on getting the recipe. Now, I'm really going to get it.

 

Great! We will each have our own bottle of Bailey's....it's the holidays.

 

I've made 'em before... but never the first recipe that uses sour cream and no meat. Sounds good, but I'm afraid it might get a little runny at room temp.

The second one is a failproof. Just use the thinnest sliced deli meat you can get.

 

Failproof and easier....my kind of cooking...

Sounds good! We'll definitely be needing some fun in the sun by then. I wonder if, being OT's campaign manager, I can figure out a way to "expense" the cruise for all of us. It seems to be the American way these days.
